Originally known as The Casket Store, Auburn
Monument is now focusing its full efforts on con-

Penguin Bay, a new sister brand
of Swedish Hill winery, is located at
the site of the former Finger Lakes
Champagne House, 6075 Route 414
in Hector, on the east side of Seneca
Lake. Our first wines were released
on October 8, 2005, so we are excit-
ed to begin our first full year as Pen-
guin Bay. The brand is a partnership
with the Rosamond Gifford Zoo in
Syracuse, as a portion of the pro-
ceeds are donated to the new Hum-
boldt Penguin exhibit at the zoo. We
currently offer three white and three
red wines. These include a dry white
Pinot Grigio based blend called Arc-
tic Three, a semi-sweet Riesling, a
Cabernet, a 4 variety dry red Shi-
raz-style wine called Maroon Four ,
and Tuxedo Red and Tuxedo White
(our fun and fruity semi-sweet blends).
New in 2006 will be Humboldt Red,
a semi-dry softer styled red named
after the Humboldt Penguins. Infor-
mational displays about the penguins
will be set up at the winery in 2006.
The partnership was a bit of a nat-
ural for us, since we have always had
pets at our other wineries (Swedish
Hill and Goose Watch). Since there
is no residence at Penguin Bay, the
next best thing to having resident
pets was to support the zoo program.
We find that many people do not
realize how many differences there
are between penguins and that all of
them are not the arctic cold habitat
types.
Since we had developed quite a
following as the only stop on the
Finger Lakes Wine Trail, that offered
many types of champagnes for tast-
ing, rest assured that you can still
do this, as we still offer our Swedish
Hill and Goose Watch Champagnes
at Penguin Bay.

Not your typical dining experience.
Located in the heart of the Finger Lakes region,
The Millstone Restaurant is the areas newest des-
tination for your dining experience. We are com-
mitted to redefining todays version of a country
club. We will provide outstanding year round
service in an atmosphere that reflects and encour-
ages the beauty of our local community. In addi-
tion, we will offer a menu of choice foods, using
only the highest quality ingredients.
The beauty of our warmly decorated dining
room, and hand crafted bar will welcome you
upon arrival. A panoramic view of The Mill-
stone Golf Course- whether covered in a blan-
ket of snow or glistening with green grass- will serve
as a visual reminder of Central New Yorks rare envi-
ronmental assets.
Our menu has been developed from the sug-
gestions of the local community and offers most-
ly home made specialties. We insist on quality and
freshness in our ingredients so that we are able to
pass that experience on to our customers. From
hand cut French Fries and marinated Chicken
Fingers to freshly made Hamburgers and Wheat
Pizzas, we have taken the most popular "All Amer-
ican" meals and put a personal touch on them. Our
hearty soups and chili are made on premise, and
all meals are prepared to order. We also offer
daily special, including fresh haddock, which is avail-
able either hand breaded and fried or oven broiled
in white wine, throughout the weekends.
During the warmer climates, you can enjoy the
unique experience of dining on our outdoor patio-
although we are located on Rt. 5, it will make
you feel miles away from the hustle and bustle
of every day life. Winter offers another opportunity
for the outdoor enthusiast as we are snowmobile
accessible from the main corridor trails. If you pre-
fer for sports to be from a spectator point of view,
we also offer drink and food specials during all tel-
evised Syracuse Basketball Games, and a Happy
Hour Monday through Friday
We are conveniently located between T&K
Lumber and Tessy Plastics on Route 5, in the
town of Elbridge. So no matter what you are
looking for- an all day get-away, a great meal in
a casual, warm atmosphere or even something to
go on your way home, The Millstone Restaurant
has more to offer than the typical dining experi-
ence.

Opening in 1997, we will be celebrating
our 9th year at Goose Watch, located at
5480 Route 89 in Romulus. Since that time,
we have grown from just a few thousand
cases produced that first year to 15,000
cases for 2006. We specialize in what other
area wineries do not. In other words, we
focus on grape varieties and or wine styles
that you will not find at most other stops along
the trail. With wines like Pinot Grigio,
Viognier, Lemberger and Cabernet Sauvi-
gnon, you'll find wines that may be well
known in some other parts of the world,
but are hard to find in the Finger Lakes.
Or you can take a step back in time with our
Diamond and Rosé of Isabella, two of the
earliest grape varieties grown in the Finger
Lakes (but were nearly extinct before we
resurrected them), or try something really
new such as our increasingly popular Melody
and Traminette, two newer grapes devel-
oped by Cornell University especially for
the Finger Lakes. Always looking to expand
our offerings, you will also find two very
unique premium dessert wines with our
Finalé White Port and Classic Cream Sher-
ry. We have earned numerous gold medals
including this past years big win for Diamond
in Riverside, CA for `Best White Wine' as
well as a double gold for our Traminette in
San Francisco, CA.
Goose Watch offers a great view of Cayu-
ga Lake with beautiful picnic areas and we
also offer boat docking for up to 11 boats.
Our gift shop offers many unique gifts for
the wine lover as well as gourmet foods
including smoked trout and cheeses.
We are also home to one of the area's only
commercial chestnut groves, with over 14
acres cultivated on the property. Chestnuts
are available for purchase during the fall
and early winter. Plan to attend our annu-
al Chestnut Festival held the last Saturday
in October, for all sorts of treats made with
chestnuts, live music and more. Goose
Watch is open daily year round from 10
am to 6 pm (closed Thanksgiving and Christ-
mas day).
